Skinny Tuna on Sprouted Grains

Flavoured with fennel and lemon juice and garnished with pea sprouts and fresh cucumber the Skinny Tuna on Sprouted Grains is living proof that dieting does not have to result in tasteless food and no carbohydrates. With Stonemill's Sprouted Grains-3 Grain Bread, dieters will rest easy knowing that this bread has a GI of 55, is rich in fibre and easily digested.


1 can white tuna, packed in water, drained 1
1/4 cup finely diced fennel bulb 50 mL
2 tsp minced fennel fronds 10 mL
1 tsp lemon zest 5 mL
1 tbsp lemon juice 15 mL
1/4 tsp each salt and fresh cracked pepper 5 mL
6 thin slices cucumber slices 6
1/4 cup pea or radish sprouts 50 mL
2 slices Stonemill Sprouted Grains, 3 Grain Bread 2

In a medium-sized bowl, combine tuna, fennel, fronds, lemon zest, lemon juice, salt and pepper. Using a fork, stir to combine, breaking up any large chunks of tuna.

Arrange cucumber slices on one slice of bread. Spread half of the tuna mixture over the cucumber and save the other half in an airtight container for another sandwich (will keep in the refrigerator for up to 3 days). Top with sprouts and cover with the remaining slice of bread.

Makes 1 sandwich.
